A LITTLE HISTORY
Ed has been cooking most of his life, beginning with cooking chicken jambalaya over wood fire coals when he was twelve. He has been a boy scout, explorer scout, and a scoutmaster, as well as a farmer, a cowboy, a hunter, fisherman, and long-time camper. He is well known in South Louisiana as a jambalaya cooking champion and cooking contest judge, and is also recognized as an internationally published "cowboy poet." From the "Black Iron" pots used in jambalaya cooking, he extended his skills to include virtually all outdoor cooking techniques, with a special emphasis on Dutch Oven cooking. He has made it a special project to tutor the "next generation" in this cooking tradition.
